Yeah the name of this recipe is a mouthful, which is ironic considering it will take you only two mouthfuls maximum to eat one of these mini cupcakes. I spent a lot of time tonight debating which recipe to share with you, and really nothing felt right. It felt too early to start posting the Halloween or pumpkin recipes; it felt too late to post more cornbread muffin recipes that are perfect for cookouts. I mean, technically it is Fall, but when the month of September is hotter than the month of July you have a hard time believing that the season has changed. Believe it or not, this creates some serious problems for blog post planning.

Okay, so…how about something apple? Apples are a favorite fall fruit, but they also evoke the last few moments of summer (because you give apples to teachers when school starts). Apples are the perfect solution to my seasonal baking dilemma. Crisis averted–tastebuds happy.

They say that, in general life, necessity is the mother of all invention. In baking, leftovers are the mother of all invention. I can’t count how many recipes I’ve come up with that came out of having extras of an ingredient I used for a different recipe and compulsively needed to use up. It’s like with all the random specialty or seasonal ingredients I’ll buy: for the intended recipe I may only need 1/2 cup but I have to put the remainder to use! Hence three different pomegranate scones, lemon thyme basil scones, and cinnamon chip scones/cinnamon chip pumpkin bread, just to name a few. Once inspiration for those leftovers hits, I often have to run to the grocery store to buy a different specialty ingredient for that recipe and then end up with leftovers of the new ingredients. And thus the leftovers dilemma continues. It’s a vicious cycle my friends.

Combine that with my other compulsive baking need to find some twist on a recipe or figure out some way to make it a little more complicated, and you end up with Toffee and Candied Pecan Snickerdoodles before I even get around to making a solid basic snickerdoodle cookie. Oops. I blame Thanksgiving and salad.

Growing up, apple pie was my favorite dessert. Yeah I’d eat cake or cookies or ice cream, but if you put a slice of apple pie in front of me, you’d be my best friend for life–or at least until someone else gave me a slice of pie. I should have made this cake that day, since it is the best of both worlds, a hybrid of apple pie and the best cake I’ve ever tasted. And I make a lot of cakes. If only I had come up with this recipe back then! Alas I wasn’t such a crazy baker back in my tween years so I had to wait a decade to develop the perfect apple pie cake.

Banana Chocolate Chip Coffee Cake

I have had an inexplicable craving for coffee cake lately. Like having dreams of coffee cake, resisting ordering coffee cake for lunch every time I go to my favorite cafe, saving recipe after recipe for coffee cake, and convincing my mom that I should use at least three of the aforementioned Costco bananas to make a banana coffee cake instead of the banana bread or more banana scones she requested.

And then I go and post the resulting recipe on my blog with a (about to come) tangent about Mother’s Day being the perfect excuse to make this not-the-banana-bread-my-mom-wanted banana chocolate chip coffee cake. I’m a horrible daughter. Blame coffee cake!
